Arugula, Watermelon and Feta Salad

Peppery arugula can overwhelm a salad quickly. Spicy and bold, it benefits from the balance of other strong flavors in this simple summertime salad. Sweet watermelon and briny, salty feta offset the spiciness in a pleasing harmony.

INGREDIENTS FOR THE SALAD:

Fresh arugula
Diced watermelon
Diced feta cheese (look for a block of feta sold in its brine, not pre-crumbled)

INGREDIENTS FOR THE VINAIGRETTE (enough for several salads):
¼ cup MadHouse Vinegar (pawpaw, white wine or apple cider work well)
¼ cup extra virgin olive oil
2-3 Tablespoons of feta brine
Pinch of salt
Pinch of freshly ground black pepper

DIRECTIONS:
Add all the ingredients for the vinaigrette to a glass jar and shake well to combine. Layer arugula, watermelon, and feta in your bowl, and drizzle with the vinaigrette. Enjoy!
