375 ml of MadHouse Light Malt Vinegar

Sharp and bright with slight earthiness in finish. Dark malt is great on fish and chips because its robust flavor balances out the fried batter and potato. Light malt is a much lighter version of the same—so not a big enough flavor to compete with thick fried batter, but just enough umami and bright acid to use in a sauce for tempura or light pan-fried Asian dishes.
