Chicken of the Woods

At certain times of year Mother Earth grants us specific, memorable moments of bliss. Freshly foraged mushrooms are certainly one of those moments! So flavorful and delicious, meaty and tender, Chicken of the Woods are truly a spectacular treat. As with most exceptional ingredients, they don’t need much accompaniment to shine—just sauté in some butter and you’re on your way. These mushrooms can be used in any recipe like you would use chicken (we’ve heard breaded and fried are delightful!) but this simple preparation is equally lovely. Serve as part of a charcuterie spread, with a salad, or just eat them out of the pan and revel in the experience.

INGREDIENTS:
Chicken of the Woods mushroom, cut or torn into bite size pieces
A few tablespoons of butter
Salt and pepper

DIRECTIONS:
Melt the butter over medium heat in a large skillet. Add the mushrooms and cook until browned on all sides. Add a little more butter as needed to keep the mushrooms from sticking or burning. Season with salt and pepper.
