Ramp Vinegar Mayonnaise
This is a super simple, and vibrant “ramped up” mayonnaise with tons of everyday applications. Bright, pungent notes from the vinegar come forward with a rounded off bite from the purple mustard.
INGREDIENTS
5 raw egg yolks
1 cup neutral flavor oil (such as vegetable or grapeseed oil)
2 tablespoons Madhouse Appalachian Ramp Vinegar
1 tablespoon Batch No 2 Purple Pride Mustard
Salt to taste
DIRECTIONS
For this recipe you can either hand whisk, which takes a bit of elbow grease—or if you have one and want to save yourself some time, a food processor works great. First, separate the egg yolks out into your bowl or food processor. Next add in the mustard, vinegar, and salt then whisk or pulse together. Once all ingredients are well blended, very slowly stream in your oil while you whisk or while your machine is running on low. Do this until you’ve got the texture you like and you’re finished.
Use Ramp Mayo in place of regular mayonnaise to brighten up your sandwiches, or enjoy it as a sauce for dipping.
