Winter apple compote

Fall and winter are a great time for apples, but sometimes buying a whole quart of them can seem a little intimidating. Making compote is a great way to get the most out of your apples. This way-too-easy recipe is the perfect accompaniment for latkes, hand pies, granola—whatever your heart (or taste buds) desire.

INGREDIENTS
4-6 Pink lady apples (1 Quart)

1 cup water

¾ Cup sugar

2 tablespoons lemon juice (½ lemon squeezed)

 Potato masher

 DIRECTIONS
Peel, core, and slice your apples into one inch cubes. Add sugar and water to a medium saucepan and set to medium heat. Add in the apples and lemon. Simmer for 8-12 minutes or until very soft. Mash with potato masher. Cool completely before refrigeration.
