Whipped Feta
Until we get a proper oven on the farm, the only bread we make with any regularity is naan. It’s incredibly easy to whip up and it’s a quick fry and flip on the griddle over a hot fire.
But that means we are also frequently searching for things that go well with naan. Today, while in the mood to make party food, we threw together a dip/spread of whipped feta cheese. Salty and a little sour, it was the perfect match for naan hot off the grill.
Ingredients
6 oz crumbled feta
4 oz yogurt - 2% Greek
1 small clove garlic
2 TBSP lemon juice
2 TBSP roasted tomato basil herb mix
2 TBSP olive oil
Directions
Combine all ingredients in a blender or food processor. Blend until smooth. Add water at the beginning, a tablespoon at a time, as needed just to help the blender along.
All the seasonings are to taste so if you’d like a version that’s extra garlicky or lemony or tomato-basil--go for it! Garnish with a swirl of olive oil and a sprinkle of herbs.
