Farm Fresh Breakfast Hash

Thanks to our amazing garden team and CSA members, August is that magical time of the year when you can source an entire meal's ingredients right on the farm (and the on-farm market, where we stock Woodland Farm pork sausage!). And CSA Jen has put together another winning breakfast that takes full advantage of the lovely tastes available to us right now.
Plus, who doesn't love a good fried hash?
1lb Woodland Farms pork sausage
1 onion, diced
1lb potatoes, scrubbed and diced
Sage, thyme, parsley, rosemary or another fresh herb, to taste
1 bunch Swiss chard or another green, diced
Brown the sausage in a large skillet over medium heat until fully cooked. Add the onion and potatoes, fry until potatoes are well browned and crispy, about 15 minutes. Stir carefully, and only when the potatoes are sufficiently browned to release from the pan without breaking.
Stir in the herbs, if using, and the greens. Saute until greens are wilted. Serve with toast.
Great with a side of eggs!
